- Soy, tamari, or coconut aminos. Soy is lowest-carb; tamari skips gluten; coconut aminos run sweeter — count them.
- Xanthan gum replaces cornstarch. A pinch, whisked in — it thickens tenfold, so respect it.
- Allulose is the wok's sweetener. It caramelizes and glazes like sugar; erythritol crystallizes — save it for the desserts at keto.pink.
- Sesame oil is a finisher, not a fryer. Drops at the end; avocado oil for the heat.
- The wok wants violence. Highest heat, small batches, food that sizzles on contact. Crowded woks steam; hungry cooks wait.
